Slow Cooker Bacon Cheeseburger Soup
Dinner in the slow cooker is my go-to for making sure we have a good, hot meal, no matter how busy our day gets. Honestly, without our slow cookers (yes, we have more than one), I would be lost!
With 7 kiddos at home, some days get too crazy busy to remember to pull something out. Instead of resorting to sandwiches, I typically have a freezer meal ready to go in the slow cooker.
I knew today would be a super busy day, so I pulled out a recipe a friend sent me, and gave it a try. She said this Bacon Cheeseburger Soup was AMAZING, and we just HAD to try it! She was SO right!
Keep in mind the recipes I typically post can be halved for a more “normal” sized family.
- 2lb ground beef
- 2lb Velveeta, cubed
- 2lb loose, frozen hash browns (not patties)
- 4- 14.5oz cans chicken broth
- 1c cooked bacon, crumbled
- Salt, pepper, and garlic salt to taste
To achieve this, simply layer the ingredients in the bottom in this order:
- Hamburger, cooked and seasoned with salt, pepper, and garlic salt
- Half of the Velveeta, evenly spread out
- Hash browns
- Chicken broth
- Remaining half of Velveeta, evenly spread out
- Bacon sprinkled over top
Cook on low for 4 hours (less if hash browns aren’t frozen). Stir after the 3rd hour to thoroughly mix the ingredients. You should have something resembling this:
Not the most beautiful looking mess, but when don’t let it’s appearance deceive you! It’s absolutely wonderful!
Once it’s done, dish it out, and garnish with more crumbled bacon, if desired. Viola! Dinner is served! Now you can have that cheeseburger you’re craving, even when it’s too cold to grill!
